18 - 1/4 cup fresh cilantro, chopped
19 - 1/2 cup sour cream or Greek yogurt
20 - 1 small avocado, sliced
21 - 1 lime, cut into wedges

# How to Make It:

01 - Preheat the oven to 400°F. Prick sweet potatoes several times with a fork, rub with olive oil and salt, place on baking sheet, and roast for 40 to 50 minutes until tender.
02 - Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add chicken, bell peppers, and onion, then season with chili powder, smoked paprika, cumin, garlic powder, oregano, cayenne (if using), salt, and black pepper. Sauté for 7 to 8 minutes until chicken is cooked through and vegetables are tender.
03 - Allow roasted sweet potatoes to cool slightly. Slice each lengthwise and gently fluff the flesh with a fork to create space for filling.
04 - Fill each sweet potato with the warm fajita chicken mixture. Top with cheese if desired, allowing it to melt slightly. Garnish with cilantro, sour cream or Greek yogurt, avocado slices, and lime wedges. Serve immediately.

# Expert Tips:

01 -
  • One pan plus one baking sheet means minimal cleanup after dinner.
  • The sweet potato becomes a natural vessel that makes the whole meal feel more elegant than it actually is.
  • It's filling enough for dinner yet light enough that you don't feel weighed down afterward.
  • Naturally gluten-free and endlessly customizable based on what's in your fridge.
02 -
  • Don't slice your chicken too thick or it'll take forever to cook and won't absorb the spices properly.
  • The lime juice isn't optional—it's what ties everything together and makes the whole dish taste bright and complete.
03 -
  • Slice your bell peppers and onions uniformly so they cook at the same rate as the chicken.
  • If your potatoes seem like they're cooking too fast on the outside, lower the heat to 375°F and give them a few extra minutes.
