# How to Make It:

01 - Preheat oven to 400°F. Pierce sweet potatoes several times with a fork, place on a baking sheet, and roast for 40 to 50 minutes until tender.
02 - Combine chicken strips with olive oil, smoked paprika, cumin, chili powder, garlic powder, onion powder, oregano, salt, and black pepper in a bowl.
03 - Heat a large skillet over medium-high heat. Add seasoned chicken and cook for 5 to 6 minutes until lightly browned and cooked through. Remove from skillet and set aside.
04 - In the same skillet, add sliced bell peppers and red onion. Sauté for 5 to 7 minutes until softened and slightly caramelized.
05 - Return cooked chicken to skillet, toss with vegetables, and cook for an additional 1 to 2 minutes to heat through.
06 - Allow roasted sweet potatoes to cool slightly. Cut a lengthwise slit along each potato and gently fluff the insides with a fork.
07 - Fill each sweet potato with the chicken fajita mixture. Top with a dollop of Greek yogurt, chopped cilantro, and a squeeze of lime juice.
08 - Serve immediately with additional lime wedges on the side.

# Expert Tips:

01 -
  • The sweet potatoes get perfectly tender and creamy, almost like they were made to hold all those spiced chicken and peppers.
  • Everything comes together in about an hour, and most of that time is hands off while the oven does the work.
  • Its naturally gluten free and packed with flavor, so no one at the table feels like theyre missing out on anything.
02 -
  • Pierce those sweet potatoes well before roasting or they might burst in the oven, trust me on this one.
  • Dont skip the lime juice at the end, it brightens everything and makes the flavors pop in a way thats hard to describe until you taste it.
03 -
  • Let the sweet potatoes cool for a few minutes before slicing them open so you dont burn your fingers trying to fluff them.
  • Use a cast iron skillet if you have one, it gives the peppers and onions those beautiful caramelized edges that make all the difference.
