Homemade Strawberry Gummies (Printable Version)

# What You Need:

→ Fruit Base

01 - 1 ½ cups fresh strawberries, hulled and halved
02 - 2-3 tablespoons honey or maple syrup
03 - 2 tablespoons freshly squeezed lemon juice

→ Gelatin Mixture

04 - 3 tablespoons unflavored gelatin powder
05 - ½ cup cold water

# How to Make It:

01 - Combine strawberries and lemon juice in blender. Process until completely smooth, approximately 30-60 seconds.
02 - Transfer puree to small saucepan. Add honey or maple syrup and stir thoroughly to incorporate.
03 - Sprinkle gelatin over cold water in separate bowl. Let stand 3-5 minutes until mixture thickens and absorbs liquid completely.
04 - Heat strawberry mixture over medium-low heat for 2-3 minutes until just warmed through. Do not boil.
05 - Add bloomed gelatin to warm puree. Whisk continuously for 2 minutes until gelatin dissolves completely and mixture becomes smooth.
06 - Carefully transfer mixture to silicone gummy molds or parchment-lined baking dish. Remove air bubbles by tapping gently on counter.
07 - Refrigerate minimum 2 hours or until completely firm and set throughout.
08 - Pop gummies from molds or cut into bite-sized pieces. Store in airtight container refrigerated up to 1 week.
